The name Daruma Shochu comes from the “Daruma” doll, which has the auspicious meaning of falling down seven times and getting up eight times. Daruma Shochu is a type of shochu, but it is characterized by the fact that it is blended with a small amount of sake lees shochu, which is said to be the secret to its unique flavor. In addition, the ultra-soft water used for dilution, “Wasabi no Sato no Meisui” from Yoshiwa-cho, Hatsukaichi City, Hiroshima Prefecture, brings out the soft and mellow flavor of the shochu.
