The name Daruma Shochu comes from the “Daruma” doll, which has the auspicious meaning of falling down seven times and getting up eight times. Daruma Shochu is a type of shochu, but it is characterized by the fact that it is blended with a small amount of sake lees shochu, which is said to be the secret to its unique flavor. In addition, the ultra-soft water used for dilution, “Wasabi no Sato no Meisui” from Yoshiwa-cho, Hatsukaichi City, Hiroshima Prefecture, brings out the soft and mellow flavor of the shochu. Shochu is a Japanese distilled spirit, typically around 25% ABV, made from a variety of base ingredients like rice, barley, sweet potatoes, or buckwheat. It’s known for its diverse flavor profiles depending on the base ingredient and production methods. Unlike sake, which is brewed, shochu is distilled, similar to whiskey.
